Boobees Honey is about as small as a honey operation gets, and we like it that way. Two Langstroth hives of Italian bees sit in our yard in Hartford City. They forage what grows here — clover, wildflower, whatever's blooming that month — which is why no two batches taste quite the same.
The honey is raw and unfiltered. We don't heat it, we don't pasteurize it, and we don't cut it with anything. It goes from the frame through a strainer and into the jar. If it crystallizes on your counter in a few months, that's a good sign — set the jar in warm water and it comes right back.
We pull honey only when the bees can spare it. Some years that means plenty of jars, some years it means a short season. When we're out, we're out until the next pull.
